There’s something irresistibly comforting about freshly baked cookies, especially when they’re thick, chewy, and brimming with peanut butter goodness. This recipe for Thick and Chewy Peanut Butter Cookies is a delightful treat for anyone who loves the rich taste of peanut butter melded with the perfect amount of sweetness. Whether you’re baking a batch for a family gathering, a simple dessert at home, or just to fill the cookie jar, these cookies are sure to please.

Ingredients

  • Unsalted butter: 1/2 cup, softened

  • Creamy peanut butter: 1 cup

  • Granulated sugar: 1 cup

  • Brown sugar: 1/2 cup, packed

  • Large egg: 1

  • Vanilla extract: 1 tsp

  • All-purpose flour: 1 1/4 cups

  • Baking soda: 1/2 tsp

  • Salt: 1/4 tsp

Instructions

Step 1: Preheat Oven

Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent the cookies from sticking.

Step 2: Cream the Butters & Sugars

In a large bowl, use either a hand mixer or a stand mixer to beat together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 2 minutes.

Step 3: Add Wet Ingredients

Continue by beating in the egg and vanilla extract until the mixture is fully combined and smooth.

Step 4: Add Dry Ingredients

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, mixing until a thick cookie dough forms.

Step 5: Shape & Press

Scoop the dough into tablespoon-sized balls and place them on your prepared baking sheet, spacing them about 2 inches apart. Use a fork to gently press a crisscross pattern onto the top of each cookie.

Notes

These cookies are best when baked until the edges are set but the centers are slightly underbaked, giving them a wonderfully chewy texture.
