Ingredients
-
Unsalted butter: 1/2 cup, softened
-
Creamy peanut butter: 1 cup
-
Granulated sugar: 1 cup
-
Brown sugar: 1/2 cup, packed
-
Large egg: 1
-
Vanilla extract: 1 tsp
-
All-purpose flour: 1 1/4 cups
-
Baking soda: 1/2 tsp
-
Salt: 1/4 tsp
Instructions
Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent the cookies from sticking.
In a large bowl, use either a hand mixer or a stand mixer to beat together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 2 minutes.
Continue by beating in the egg and vanilla extract until the mixture is fully combined and smooth.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, mixing until a thick cookie dough forms.
Scoop the dough into tablespoon-sized balls and place them on your prepared baking sheet, spacing them about 2 inches apart. Use a fork to gently press a crisscross pattern onto the top of each cookie.
Notes
These cookies are best when baked until the edges are set but the centers are slightly underbaked, giving them a wonderfully chewy texture.
