Description

Ingredients

  • 4 bell peppers, diced
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic. Sauté for 3-4 minutes until the onion is soft and translucent.
  • Add the ground turkey, breaking it apart with a spoon. Cook for 5-7 minutes, until browned and cooked through.
  • Stir in the diced bell peppers, cooked rice, diced tomatoes (with their juice), Italian seasoning, paprika, salt, and pepper. Mix well and let it simmer for 5 minutes.
  • Transfer the mixture to a greased 9×13 inch baking dish. Spread it evenly and sprinkle the shredded cheese on top.
  • Cover with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake uncovered for another 10-15 minutes, or until the cheese is bubbly and golden.
  • Let it cool slightly before serving. Enjoy!

Notes

  • For added flavor, try using fire-roasted diced tomatoes or adding a pinch of red pepper flakes for some heat.
  • Swap ground turkey with ground chicken or beef for variety.
  • Brown rice or quinoa can be used instead of white rice for a healthier twist.
