A hearty and comforting Stuffed Pepper Casserole made with flavorful ground turkey, tender bell peppers, and fluffy rice, all baked under a melty layer of cheese. This family-friendly dinner is easy to prepare and perfect for busy weeknights!

- 4 bell peppers, diced
- 1 pound ground turkey
- 1 cup cooked rice
- 1 can (15 oz) diced tomatoes, undrained
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic. Sauté for 3-4 minutes until the onion is soft and translucent.
- Add the ground turkey, breaking it apart with a spoon. Cook for 5-7 minutes, until browned and cooked through.
- Stir in the diced bell peppers, cooked rice, diced tomatoes (with their juice), Italian seasoning, paprika, salt, and pepper. Mix well and let it simmer for 5 minutes.
- Transfer the mixture to a greased 9×13 inch baking dish. Spread it evenly and sprinkle the shredded cheese on top.
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil and bake uncovered for another 10-15 minutes, or until the cheese is bubbly and golden.
- Let it cool slightly before serving. Enjoy!

- For added flavor, try using fire-roasted diced tomatoes or adding a pinch of red pepper flakes for some heat.
- Swap ground turkey with ground chicken or beef for variety.
- Brown rice or quinoa can be used instead of white rice for a healthier twist.
