  • 4 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
  • Add the fresh spinach and sun-dried tomatoes to the skillet. Cook for 3-4 minutes, stirring occasionally, until the spinach is wilted.
  • Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and mix until the sauce is smooth and creamy. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  • Add the cooked spaghetti to the skillet and toss to coat the pasta evenly with the sauce. Season with salt and pepper to taste.
  • Serve immediately, garnished with fresh basil and additional Parmesan cheese if desired.
