  • 1 packet Italian dressing mix
  • 1 cup chicken broth
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (8 oz) package cream cheese
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 8 oz penne pasta
  • 1 cup spinach, chopped
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  • Place the chicken breasts in the slow cooker and sprinkle the Italian dressing mix over them.
  • Pour the chicken broth and cream of chicken soup over the chicken, ensuring it is well coated.
  • Add the cream cheese on top of the mixture and cover the slow cooker. Cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  • Once the chicken is cooked, shred it using two forks and stir it back into the sauce.
  • Stir in the grated Parmesan cheese and heavy cream, mixing until well combined.
  • Meanwhile, cook the penne pasta according to package instructions until al dente. Drain and set aside.
  • Add the cooked pasta and chopped spinach to the slow cooker, stirring gently to combine. Season with salt and pepper to taste.
  • Cover and let it sit for an additional 10-15 minutes to allow the spinach to wilt and the flavors to meld.
  • Serve hot, garnished with fresh parsley.
