Description

Sweet, crunchy Scotcheroo Truffles are a no-bake treat made with peanut butter, Rice Krispies, and a chocolate-butterscotch coating. Perfect for any occasion!

 


Ingredients

For the Truffles:

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 2 tablespoons butter
  • 1½ cups Rice Krispies cereal

For the Coating:

  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips
  • Optional: ¼ cup butterscotch chips for drizzling

Instructions

  • In a large bowl, mix peanut butter, powdered sugar, and butter until smooth. Fold in Rice Krispies cereal.
  • Roll the mixture into small balls and place on a parchment-lined baking sheet. Chill for 30 minutes.
  • Melt chocolate chips and butterscotch chips in the microwave, stirring until smooth.
  • Dip each truffle into the melted mixture, coat evenly, and return to the baking sheet.
  • Optional: Drizzle melted butterscotch chips over the coated truffles for decoration.
  • Chill the truffles for 1 hour until the coating is set. Serve and enjoy!
