For the Truffles:
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 2 tablespoons butter
- 1½ cups Rice Krispies cereal
For the Coating:
- 1 cup semisweet chocolate chips
- 1 cup butterscotch chips
- Optional: ¼ cup butterscotch chips for drizzling
Instructions
- In a large bowl, mix peanut butter, powdered sugar, and butter until smooth. Fold in Rice Krispies cereal.
- Roll the mixture into small balls and place on a parchment-lined baking sheet. Chill for 30 minutes.
- Melt chocolate chips and butterscotch chips in the microwave, stirring until smooth.
- Dip each truffle into the melted mixture, coat evenly, and return to the baking sheet.
- Optional: Drizzle melted butterscotch chips over the coated truffles for decoration.
- Chill the truffles for 1 hour until the coating is set. Serve and enjoy!
