Description

Scotcheroo Truffles are a bite-sized twist on the classic scotcheroo bars. These no-bake treats combine creamy peanut butter, crispy rice cereal, and butterscotch with a delicious chocolate drizzle. Perfect for parties, holidays, or a quick sweet snack, they offer a rich and chewy texture with a hint of crunch.

  • 1 cup powdered sugar
  • 2 cups crispy rice cereal
  • ½ cup butterscotch chips, melted
  • ½ teaspoon vanilla extract

For the Chocolate Drizzle:

  • 1 teaspoon coconut oil or butter

Instructions

  • Prepare the Mixture

    • In a large mixing bowl, combine peanut butter, powdered sugar, and vanilla extract. Stir until smooth.
    • Gently fold in the crispy rice cereal until fully coated.
  • Shape the Truffles

    • Roll the mixture into small bite-sized balls (about 1 inch in diameter).
    • Place them on a parchment-lined baking sheet.
  • Melt the Butterscotch

    • In a microwave-safe bowl, melt the butterscotch chips in 20-second intervals, stirring between each, until smooth.
    • Drizzle the melted butterscotch over the truffles or dip them entirely for extra flavor.
  • Add the Chocolate Drizzle

    • Melt the semisweet chocolate chips with coconut oil or butter in the microwave in 20-second intervals, stirring each time.
    • Drizzle over the truffles using a spoon or piping bag.
  • Chill & Serve

    • Refrigerate for at least 30 minutes until the truffles set.
    • Serve chilled or at room temperature.
