Description

Rich, creamy Scotcheroo Cheesecake Bars combine a graham cracker crust, velvety cheesecake layer, and chocolate-butterscotch drizzle.


Ingredients

For the Base:

  • 1½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar

For the Cheesecake Layer:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract

For the Topping:

  • ½ cup semisweet chocolate chips
  • ½ cup butterscotch chips
  • 2 tablespoons heavy cream (optional)
  • Optional: Crushed peanuts or graham cracker crumbs

 


Instructions

  • Preheat the oven to 325°F (160°C). Mix graham cracker crumbs, butter, and sugar. Press into an 8×8-inch pan. Bake for 8-10 minutes, then cool.
  • Beat cream cheese and sugar until smooth. Add eggs, sour cream, and vanilla. Pour over the crust. Bake for 30-35 minutes until set. Cool, then chill for 4+ hours.
  • Melt chocolate chips and butterscotch chips. Drizzle over the cheesecake. Add optional crushed peanuts or crumbs.
  • Slice into bars and serve chilled.
