For the Base:
- 1½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
For the Cheesecake Layer:
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- ½ cup sour cream
- 1 teaspoon vanilla extract
For the Topping:
- ½ cup semisweet chocolate chips
- ½ cup butterscotch chips
- 2 tablespoons heavy cream (optional)
- Optional: Crushed peanuts or graham cracker crumbs
Instructions
- Preheat the oven to 325°F (160°C). Mix graham cracker crumbs, butter, and sugar. Press into an 8×8-inch pan. Bake for 8-10 minutes, then cool.
- Beat cream cheese and sugar until smooth. Add eggs, sour cream, and vanilla. Pour over the crust. Bake for 30-35 minutes until set. Cool, then chill for 4+ hours.
- Melt chocolate chips and butterscotch chips. Drizzle over the cheesecake. Add optional crushed peanuts or crumbs.
- Slice into bars and serve chilled.
