Here’s what you’ll need:

  • 1½ cups almond flour

  • 3 large eggs

  • ¼ cup unsweetened almond milk (or heavy cream)

  • 2 tbsp melted butter or coconut oil

  • 1 tsp vanilla extract

  • 1 tbsp erythritol (or preferred sweetener)

  • ½ tsp baking powder

  • Pinch of salt

  • Butter or oil for cooking

Optional Toppings:

  • Sugar-free syrup

  • Berries

  • Whipped cream

  • Chopped nuts

  • Ground cinnamon


Instructions

Step 1: Mix the Batter

First, whisk eggs, almond milk, butter, and vanilla in a bowl.
Next, combine almond flour, sweetener, baking powder, and salt in another bowl.
Then, pour dry ingredients into the wet. Stir gently until smooth. Let sit for 2 minutes to thicken.


Step 2: Cook the Pancakes

Heat a non-stick pan over medium. Add a little butter or oil.
Scoop about 2 tablespoons of batter per pancake into the pan.
Spread gently into a circle and cook for 2–3 minutes.
Flip when bubbles form and cook for 1–2 more minutes.
Repeat with the rest of the batter.


Step 3: Serve

Stack pancakes on a plate.
Top with butter, sugar-free syrup, or berries.
Serve warm and enjoy!
