A delicious way to enjoy squash with a crispy, oven-fried texture.

Ingredients

Scale
  • 2 medium yellow squash
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the squash into thin rounds.
  3. In a bowl, beat the eggs and mix garlic powder, salt, and pepper.
  4. In another bowl, combine breadcrumbs and Parmesan cheese.
  5. Dip each squash slice in the egg mixture, then coat with the breadcrumb mixture.
  6. Place the coated squash on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes, turning halfway through, until golden and crispy.

Notes

  • For a spicier version, add cayenne pepper to the breadcrumb mixture.
  • Make sure to space the squash slices out on the baking sheet for even cooking.
