  • 8 oz (225 g) pasta (penne or fusilli)
  • 1 lb (450 g) chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Add the chicken pieces, season with salt and pepper, and cook for 5-7 minutes, until browned and cooked through. Remove the chicken from the pot and set aside.
  • In the same pot, sauté minced garlic for 1 minute until fragrant. Stir in honey, soy sauce, and red pepper flakes.
  • Pour in the chicken broth and bring to a boil. Add pasta, stir well, reduce heat to a simmer, cover, and cook for 10 minutes, stirring occasionally.
  • Add the bell peppers and broccoli florets to the pot. Stir and cook for another 5 minutes, or until vegetables are tender and pasta has absorbed most of the liquid.
  • Return the chicken to the pot and mix everything together. Adjust seasoning with salt and pepper, if needed.
  • Serve hot, garnished with fresh parsley.

Notes

  • For a milder version, reduce the red pepper flakes or omit them entirely.
  • Swap broccoli with spinach or zucchini for variety.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
