  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 red onion, cut into wedges
  • Fresh basil for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, oregano, thyme, salt, and pepper.
  • Place the chicken breasts in a large baking dish and pour half of the balsamic mixture over the chicken, ensuring they are well coated.
  • In a separate bowl, toss the cherry tomatoes, zucchini, bell pepper, and red onion with the remaining balsamic mixture.
  • Arrange the vegetables around the chicken in the baking dish.
  • Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh basil.

Notes

  • For added flavor, marinate the chicken in the balsamic mixture for 30 minutes before baking.
  • You can substitute vegetables based on your preference broccoli, carrots, or mushrooms work well too!
  • Use a meat thermometer to ensure the chicken is perfectly cooked.
