- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cherry tomatoes, halved
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 red onion, cut into wedges
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, oregano, thyme, salt, and pepper.
- Place the chicken breasts in a large baking dish and pour half of the balsamic mixture over the chicken, ensuring they are well coated.
- In a separate bowl, toss the cherry tomatoes, zucchini, bell pepper, and red onion with the remaining balsamic mixture.
- Arrange the vegetables around the chicken in the baking dish.
- Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh basil.
Notes
- For added flavor, marinate the chicken in the balsamic mixture for 30 minutes before baking.
- You can substitute vegetables based on your preference broccoli, carrots, or mushrooms work well too!
