Description

Soft, chewy, and packed with warm cinnamon flavors, these Oatmeal Raisin Cookie Bars take the classic oatmeal raisin cookie and turn it into a thick, frosted dessert bar. Perfectly spiced, rich with butter, and topped with a smooth, creamy frosting, these bars are a crowd-pleasing treat for any occasion.

Ingredients

Scale

For the Cookie Bars:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups old-fashioned rolled oats
  • 1 cup raisins

For the Buttery Frosting:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream (or milk, as needed)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

Step 1: Preheat & Prepare the Pan

Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease lightly.

Step 2: Cream the Butter & Sugars

In a large bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy.

Step 3: Add the Eggs & Vanilla

Mix in the eggs and vanilla extract, beating until smooth and fully combined.

Step 4: Mix the Dry Ingredients

In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.

Step 5: Combine Wet & Dry Ingredients

Gradually mix the dry ingredients into the wet mixture until just combined.

Step 6: Add Oats & Raisins

Fold in the oats and raisins, ensuring they’re evenly distributed.

Step 7: Bake the Cookie Bars

Spread the dough evenly into the prepared baking pan. Bake for 22-25 minutes, or until the edges turn golden brown.

Step 8: Make the Frosting

While the bars cool, beat together butter, powdered sugar, vanilla, salt, and heavy cream until smooth and creamy.

Step 9: Frost & Slice

Once completely cooled, spread the frosting over the bars. Slice into squares and enjoy!

Notes

✔ Use Room Temperature Butter – This ensures a light, fluffy texture in the batter.
✔ Don’t Overmix – Stir just until ingredients are combined to keep bars soft.
✔ Soak Raisins for Extra Softness – Let them soak in warm water for 10 minutes before adding to prevent dryness.
✔ Let Bars Cool Before Frosting – This prevents the frosting from melting into the bars.
