Description

Oatmeal Fudge Bars combine buttery oatmeal layers with a gooey chocolate fudge center, topped with a crumbly oat layer.

For the Oatmeal Layers:

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups old-fashioned oats

For the Fudge Filling:

  • 1 can (14 oz) sweetened condensed milk
  • 2 cups semisweet chocolate chips
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  • Preheat oven to 350°F (175°C). Mix butter, brown sugar, and granulated sugar. Add eggs, vanilla, and dry ingredients, folding in oats. Press ⅔ of the mixture into a greased 9×13-inch pan.
  • Melt condensed milk, chocolate chips, and butter in a saucepan. Stir in vanilla and nuts. Spread fudge over the base.
  • Crumble the remaining oatmeal mixture on top. Bake for 25-30 minutes at 350°F. Cool completely before slicing.

  • Use old-fashioned oats for the best texture.
