Rich and buttery Millionaire’s Shortbread Bars with a golden shortbread crust, gooey caramel center, and smooth chocolate topping.
Ingredients

For the Shortbread Layer:
- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- 2 cups all-purpose flour
- ¼ teaspoon salt
For the Caramel Layer:
- 1 can (14 oz) sweetened condensed milk
- ½ cup unsalted butter
- ½ cup light brown sugar, packed
- ¼ cup light corn syrup
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
For the Chocolate Layer:
- 1½ cups semisweet chocolate chips
- 2 tablespoons unsalted butter
- ¼ teaspoon sea salt (optional)
- Extra chocolate chips for topping (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
- Beat butter and sugar until creamy. Mix in flour and salt. Press into the pan and bake for 18-20 minutes. Cool.
- In a saucepan, heat condensed milk, butter, brown sugar, corn syrup, and salt over medium heat. Stir until thickened. Remove from heat and add vanilla. Pour over shortbread. Let cool.
- Melt chocolate chips and butter in the microwave. Spread over the caramel layer. Sprinkle with sea salt or extra chocolate chips.
- Refrigerate for 1-2 hours. Slice into bars and serve.
Notes
- Let the caramel cool slightly before adding the chocolate layer.
- Store in the fridge for a firmer texture.
