Ingredients
Scale
For the Salmon:
- 4 salmon fillets (6 oz each, skinless or with skin)
- 2 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
For the Sauce:
- 2 Tbsp unsalted butter
- 3–4 garlic cloves, minced
- 1 cup heavy cream
- 1/3 cup chicken broth (or vegetable broth)
- 1/2 cup grated Parmesan cheese
- 1/2 tsp chili flakes (optional, for heat)
- 1/2 cup sun-dried tomatoes, chopped
- 1 tsp dried basil (or Italian seasoning)
- 1/2 cup fresh spinach, chopped
- Salt & pepper to taste
Instructions
Step 1: Prep the Salmon
- Pat the salmon fillets dry with a paper towel to remove excess moisture, ensuring a crispy sear.
- Season the fillets evenly with garlic powder, onion powder, smoked paprika, salt, and pepper.
Step 2: Cook the Salmon
- Heat olive oil in a large skillet over medium heat.
- Sear the salmon fillets for 3-4 minutes on each side, until golden brown and cooked to your desired doneness.
- Remove the salmon from the skillet and set aside on a plate.
Step 3: Prepare the Sauce
- In the same skillet, melt the butter over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in heavy cream, chicken broth, and Parmesan cheese.
- Mix well until the cheese melts and the sauce starts to thicken slightly.
Step 4: Enhance the Flavor
- Stir in chili flakes (if using), chopped sun-dried tomatoes, and dried basil.
- Let the sauce simmer for 2-3 minutes, allowing the flavors to meld together.
Step 5: Combine Everything
- Add the fresh spinach and stir until it wilts.
- Return the seared salmon fillets to the skillet, spooning the creamy sauce over them.
- Let everything simmer for another 2 minutes so the flavors blend beautifully.
Step 6: Serve
- Garnish with fresh basil or parsley if desired.
- Serve warm with your choice of sides such as rice, mashed potatoes, or pasta.
Notes
- If using skin-on salmon, place the skin side down first when searing for crispy skin.
- Avoid overcooking the salmon as it can become dry; medium-rare to medium doneness is ideal.
- The sauce thickens as it cools, so serve immediately for the best consistency.
- If the sauce gets too thick, add a splash of chicken broth to thin it out.
