For the Salmon:

  • 4 salmon fillets (6 oz each, skinless or with skin)
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste

For the Sauce:

  • 2 Tbsp unsalted butter
  • 34 garlic cloves, minced
  • 1 cup heavy cream
  • 1/3 cup chicken broth (or vegetable broth)
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp chili flakes (optional, for heat)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp dried basil (or Italian seasoning)
  • 1/2 cup fresh spinach, chopped
  • Salt & pepper to taste

Instructions

Step 1: Prep the Salmon

  • Pat the salmon fillets dry with a paper towel to remove excess moisture, ensuring a crispy sear.
  • Season the fillets evenly with garlic powder, onion powder, smoked paprika, salt, and pepper.

Step 2: Cook the Salmon

  • Heat olive oil in a large skillet over medium heat.
  • Sear the salmon fillets for 3-4 minutes on each side, until golden brown and cooked to your desired doneness.
  • Remove the salmon from the skillet and set aside on a plate.

Step 3: Prepare the Sauce

  • In the same skillet, melt the butter over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Stir in heavy cream, chicken broth, and Parmesan cheese.
  • Mix well until the cheese melts and the sauce starts to thicken slightly.

Step 4: Enhance the Flavor

  • Stir in chili flakes (if using), chopped sun-dried tomatoes, and dried basil.
  • Let the sauce simmer for 2-3 minutes, allowing the flavors to meld together.

Step 5: Combine Everything

  • Add the fresh spinach and stir until it wilts.
  • Return the seared salmon fillets to the skillet, spooning the creamy sauce over them.
  • Let everything simmer for another 2 minutes so the flavors blend beautifully.

Step 6: Serve

  • Garnish with fresh basil or parsley if desired.
  • Serve warm with your choice of sides such as rice, mashed potatoes, or pasta.

Notes

  • If using skin-on salmon, place the skin side down first when searing for crispy skin.
  • Avoid overcooking the salmon as it can become dry; medium-rare to medium doneness is ideal.
  • The sauce thickens as it cools, so serve immediately for the best consistency.
  • If the sauce gets too thick, add a splash of chicken broth to thin it out.
