- 1 cup almond flour
- 3 tablespoons coconut oil
- 2 tablespoons maple syrup
- 1 cup cream cheese
- 1 cup Greek yogurt
- 1/2 cup raspberries
- 1/4 cup honey
- 2 teaspoons vanilla extract
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine almond flour, coconut oil, and maple syrup to form the crust.
- Press the crust mixture into the bottom of a springform pan.
- Bake for 10-12 minutes until golden and set.
- In another bowl, mix cream cheese, Greek yogurt, honey, vanilla extract, and lemon juice until smooth.
- Gently fold in raspberries.
- Pour the cheesecake filling over the baked crust.
- Bake for another 30-35 minutes or until set.
- Allow to cool and refrigerate for at least 4 hours before serving.
Notes
- For a dairy-free version, substitute cream cheese with cashew cream.
- Top with fresh raspberries or a raspberry sauce before serving for added flavor.
