Ingredients

  • 1 cup almond flour
  • 3 tablespoons coconut oil
  • 2 tablespoons maple syrup
  • 1 cup cream cheese
  • 1 cup Greek yogurt
  • 1/2 cup raspberries
  • 1/4 cup honey
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour, coconut oil, and maple syrup to form the crust.
  3. Press the crust mixture into the bottom of a springform pan.
  4. Bake for 10-12 minutes until golden and set.
  5. In another bowl, mix cream cheese, Greek yogurt, honey, vanilla extract, and lemon juice until smooth.
  6. Gently fold in raspberries.
  7. Pour the cheesecake filling over the baked crust.
  8. Bake for another 30-35 minutes or until set.
  9. Allow to cool and refrigerate for at least 4 hours before serving.
