This hearty Hamburger Noodle Soup is the ultimate comfort food! Ground beef is simmered with vegetables, savory herbs, and a rich broth, creating a flavorful base for tender egg noodles. Perfect for chilly nights or when you’re craving something warm and filling, this easy soup is a satisfying meal that comes together in no time. Top with fresh parsley for a pop of color and flavor!

Ingredients

Scale

1 pound ground beef
1 onion, chopped
2 carrots, diced
2 stalks celery, diced
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
4 cups beef broth
2 cups water
1 (14.5 oz) can diced tomatoes, undrained
2 cups egg noodles
Salt and pepper to taste
Parsley, chopped (for garnish)

Instructions

In a large pot, cook the ground beef over medium heat until browned. Drain any excess grease.
Add the onion, carrots, celery, and garlic to the pot with the beef and cook until the vegetables are softened, about 5 minutes.
Stir in the basil, oregano, beef broth, water, and diced tomatoes. Bring to a boil.
Add the egg noodles to the pot and reduce the heat to a simmer. Cook until the noodles are tender, about 10 minutes.
Season with salt and pepper to taste.
Serve hot, garnished with chopped parsley. This Hamburger Noodle Soup is a comforting and filling meal, ideal for chilly evenings or whenever you need a quick and satisfying dinner.

Notes

  • Meat Variations: You can substitute ground beef with ground turkey or chicken for a leaner option.

  • Vegetable Add-ins: Feel free to add other veggies like peas, corn, or green beans for extra texture and flavor.

  • Broth Swap: If you prefer a richer flavor, try using a beef bouillon cube or a low-sodium beef broth.

  • Noodles: You can substitute egg noodles with any other pasta, but adjust the cooking time as needed.

  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a little extra broth if it thickens too much.

  • Spice it Up: For a little heat, add a pinch of red pepper flakes or a splash of hot sauce.
