Greek Yogurt Protein Muffins

Ingredients

1 cup Greek yogurt
2 eggs
¼ cup honey or maple syrup
1 tsp vanilla extract
1 ½ cups oat flour
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
½ cup chocolate chips or berries (optional)

Instructions

Preheat oven to 350°F (175°C) and line a muffin tin.
In a bowl, mix Greek yogurt, eggs, honey, and vanilla.
Stir in oat flour, baking powder, baking soda, and cinnamon.
Fold in chocolate chips or berries if using.
Divide batter into muffin cups and bake for 18-20 minutes.
Let cool before serving.
