Description

This fluffy cottage cheese cloud bread is light, protein-packed, and incredibly versatile. With its airy texture and mild flavor, it’s the perfect low-carb base for both sweet and savory toppings—ideal for any time of year!


Ingredients

  • 4 large eggs, separated

  • ½ cup full-fat cottage cheese

  • ¼ tsp cream of tartar

  • 1 tbsp cornstarch (optional)

  • ½ tsp sea salt

  • Optional: 1 tsp honey or erythritol

  • Optional toppings: everything bagel seasoning, herbs, grated cheese, cinnamon


Instructions

  • Preheat oven to 300°F (150°C) and line a baking tray.

  • Whip egg whites and cream of tartar until stiff peaks form.

  • Blend yolks and cottage cheese with salt and optional cornstarch.

  • Gently fold yolk mixture into egg whites.

  • Scoop batter into 5 rounds on the tray.

  • Bake for 25 minutes until lightly golden and puffed.

  • Cool slightly, then serve warm or store for later.
