  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté for 5 minutes, or until softened.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Add potatoes, lentils, vegetable broth, cumin, thyme, salt, and pepper. Bring to a boil.
  • Reduce heat to low and simmer for 25-30 minutes, or until lentils and potatoes are tender.
  • Taste and adjust seasoning if needed. For a creamier texture, blend part of the soup with an immersion blender.
  • Serve hot, garnished with fresh parsley.

  • To add extra flavor, try incorporating a splash of lemon juice or a pinch of smoked paprika before serving.
