- 6 cups vegetable broth

- 1 teaspoon thyme
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté for 5 minutes, or until softened.
- Stir in minced garlic and cook for another minute until fragrant.
- Add potatoes, lentils, vegetable broth, cumin, thyme, salt, and pepper. Bring to a boil.
- Reduce heat to low and simmer for 25-30 minutes, or until lentils and potatoes are tender.
- Taste and adjust seasoning if needed. For a creamier texture, blend part of the soup with an immersion blender.
- Serve hot, garnished with fresh parsley.
