Description

The Crockpot French Onion Meatloaf with Melted Swiss Cheese combines the rich flavors of caramelized onions and gooey Swiss cheese with hearty meatloaf. Easy to prepare and perfect for any occasion, this dish is a comforting crowd-pleaser.

Ingredients

🧅 3-4 large sweet onions, sliced
🧈 4 tablespoons salted butter
🧂 1 teaspoon salt
🖤 1/2 teaspoon black pepper
🧄 1/2 teaspoon garlic powder
🧅 1/2 teaspoon onion powder
🥩 1 pound ground beef
🍞 1 cup breadcrumbs
🥛 1/4 cup milk
🥚 1 large egg
🧀 1 cup shredded Swiss cheese
🌿 Fresh parsley, chopped (for garnish)

Instructions

1️⃣ Caramelize the Onions:
In a skillet, melt the butter over medium heat.
Add the sliced onions and sprinkle with salt.
Cook the onions, stirring occasionally, until they are caramelized, about 15-20 minutes. 🧅✨
2️⃣ Mix the Meatloaf:
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, black pepper, garlic powder, and onion powder.
🥄 Mix until well combined.
3️⃣ Shape the Meatloaf:
Shape the meat mixture into a loaf and place it in the crockpot. 🍖
4️⃣ Top with Onions:
Top the meatloaf with the caramelized onions, spreading them evenly over the top.
5️⃣ Cook:
Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours, until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C). ⏳
6️⃣ Add Cheese:
About 15 minutes before serving, sprinkle the shredded Swiss cheese on top of the meatloaf.
Cover and let it melt. 🧀🔥
7️⃣ Rest and Slice:
Once done, carefully lift the meatloaf from the crockpot and let it rest for a few minutes.
8️⃣ Serve:
Slice and serve, garnished with fresh parsley if desired. 🍽️🌿

Notes

1. With Bacon
Add a layer of crispy bacon on top of the meatloaf before adding the caramelized onions for an extra smoky flavor.

2. Gluten-Free Version
Replace the breadcrumbs with gluten-free breadcrumbs or rolled oats to make this dish gluten-free.

3. Vegetarian Option
Substitute the ground beef with a plant-based meat alternative and use vegan cheese for a vegetarian-friendly version.

4. Spicy Twist
Add a teaspoon of smoked paprika or a pinch of cayenne pepper to the meat mixture for a spicy kick.
