- 1 (10.5 oz) can chicken broth
- 1 (12 oz) package stuffing mix
- 1/2 cup celery, finely chopped
- 1/2 cup onion, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup water (optional, for added moisture)
Instructions
- Arrange the chicken breasts in the bottom of the crockpot. Season them with garlic powder, dried thyme, salt, and pepper.
- In a mixing bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour this mixture over the chicken, ensuring it coats the meat evenly.
- In a separate bowl, combine the stuffing mix with the chopped celery and onion. If a softer texture is desired, stir in 1/2 cup of water.
- Spread the stuffing mixture over the soup-coated chicken in an even layer.
- Cover the crockpot with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
- Before serving, shred the chicken directly in the crockpot using two forks and mix it gently into the stuffing to blend the flavors.
Notes
- You can use chicken thighs instead of chicken breasts for a richer flavor.
- Add 1/4 cup of shredded cheese on top of the stuffing during the last 30 minutes for a cheesy twist.
