Ingredients

Scale

2 pounds beef stew meat, cut into small chunks
1 onion, chopped
2 cloves garlic, minced
1 can (10.75 oz) cream of mushroom soup
1 packet dry onion soup mix
1/2 cup beef broth
1 cup sour cream
Salt and pepper to taste
Cooked egg noodles, for serving

Instructions

Place the beef, onion, and garlic in a slow cooker.
In a bowl, mix together the cream of mushroom soup, onion soup mix, and beef broth. Pour over the beef.
Cook on low for 7-8 hours until the beef is tender.
Stir in sour cream, salt, and pepper in the last 30 minutes of cooking.
Serve the beef tips over cooked egg noodles, ensuring a rich and savory meal that’s perfect for a hearty dinner.

Notes

  • Beef Options: Use stew meat, chuck roast, or sirloin for the best results.

  • Thicker Gravy: If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir in before adding the sour cream.

  • Mushroom Lovers: Add sliced mushrooms for extra flavor and texture.

  • Serving Ideas: Try serving over mashed potatoes or rice instead of noodles.

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently to avoid curdling the sour cream.
