- 2 pounds beef stew meat, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup carrots, sliced
- 1 cup mushrooms, sliced
- 2 cups egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add beef stew meat and brown on all sides, about 5-7 minutes. Transfer browned beef to the crockpot.
- In the same skillet, sauté chopped onion and minced garlic for 2-3 minutes until the onion is translucent.
- Add onion and garlic mixture to the crockpot. Pour in beef broth, Worcestershire sauce, dried thyme, salt, and black pepper. Stir well to combine.
- Add sliced carrots and mushrooms to the crockpot, mixing with the beef and broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
- About 30 minutes before serving, stir in egg noodles. Cover and cook until noodles are tender, about 30 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- For a richer flavor, use red wine to deglaze the skillet after sautéing the onions and garlic before adding them to the crockpot.
- Egg noodles can be substituted with other types of pasta if desired.
