Description

A creamy, crunchy, and slightly tangy salad packed with cheddar, bacon, and sweet peas—this dish is a nostalgic favorite perfect for BBQs, potlucks, or a quick side dish!


Ingredients

4 cups frozen peas (thawed)
1/2 cup cheddar cheese, shredded or cubed
1/2 red onion, finely chopped
1/2 cup bacon, cooked and crumbled
1/2 cup mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon sugar (optional)
Salt and pepper, to taste


Instructions

1. Prepare the Peas: Place the thawed peas in a large mixing bowl.
2. Mix Salad Ingredients: Add the chopped red onions, bacon, and cheddar cheese to the peas.
3. Make the Dressing: In a small bowl, whisk together the mayonnaise, apple cider vinegar, sugar (if using), salt, and pepper until smooth.
4. Combine and Toss: Pour the dressing over the salad mixture and toss everything together until well-coated.
5. Chill and Serve: Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld. Serve chilled.

Notes

  • Pea Texture: Use thawed frozen peas for the best texture. Canned peas may be too soft.

  • Cheese Choice: Shredded cheese blends well, but cubed cheddar gives a chunkier bite.

  • Dressing Adjustment: For a lighter version, substitute part of the mayo with Greek yogurt or sour cream.

  • Make-Ahead Tip: Best when chilled for at least an hour before serving, allowing flavors to blend.

  • Storage: Keep in an airtight container in the fridge for up to 3 days. Stir before serving.
