Description

These Chocolate Chip Oatmeal Bars are soft, chewy, and packed with rich chocolate chips. Made with oats and brown sugar, they have a perfect balance of sweetness and texture. A quick and easy dessert for any occasion!

Bars:

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups old-fashioned oats
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups semisweet chocolate chips

Instructions

  • Preheat & Prep: Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease it lightly.
  • Mix Wet Ingredients: In a large mixing bowl, whisk together melted butter, brown sugar, and granulated sugar. Add eggs and vanilla, mixing until smooth.
  • Combine Dry Ingredients: In another bowl, whisk oats, flour, baking soda, and salt. Gradually add this to the wet ingredients, stirring until combined.
  • Add Chocolate Chips: Fold in the chocolate chips, ensuring they are evenly distributed.
  • Bake: Spread the batter evenly into the prepared pan. Bake for 25–30 minutes or until the edges are golden brown and a toothpick inserted comes out with a few moist crumbs.
  • Cool & Serve: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing into bars.

Notes

  • For Extra Chewiness: Use quick oats instead of old-fashioned oats.
  • For a Crunchy Texture: Add ½ cup chopped walnuts or pecans.
  • Storage: Store in an airtight container at room temperature for 4 days or refrigerate for up to a week.
