A delicious fusion of chocolate chip cookies and cheesecake.
Ingredients

- 1 1/2 cups cookie crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup chocolate chips
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, combine cookie crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese, brown sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in chocolate chips and pour the cheesecake batter over the crust.
- Bake for 55-60 minutes or until the center is set.
- Let it cool and then refrigerate for at least 4 hours before serving.
Notes
- For an extra touch, top with whipped cream and chocolate shavings.
- Make sure to let the cheesecake cool completely before refrigerating.
