Chicken with Buttered Noodles

  • 2 boneless, skinless chicken breasts
    Salt and pepper to taste
    2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 12 ounces egg noodles or your favorite pasta
  • 4 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons chopped parsley for garnish

Instructions

Step 1: Prepare the Chicken Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper. Heat olive oil in a skillet over medium heat. Cook the chicken for 5–6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest for 5 minutes before slicing.

Step 2: Cook the Noodles While the chicken cooks, bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions. Reserve 1/2 cup of the pasta water, then drain the noodles.

Step 3: Make the Butter Sauce In the same skillet used for the chicken, melt the butter over low heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the reserved pasta water to create a silky sauce.

Step 4: Combine Noodles and Sauce Add the cooked noodles to the skillet with the butter sauce. Toss until the noodles are fully coated. Stir in Parmesan cheese, if using, for an extra layer of flavor.

Step 5: Assemble and Serve Plate the buttered noodles and top them with sliced chicken. Garnish with chopped parsley and additional Parmesan, if desired. Serve hot and enjoy!
