For the Blondies:
- 1 cup unsalted butter, melted
- 1½ cups packed brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup butterscotch chips
- ½ cup white chocolate chips (optional)
For the Topping:
- ¼ cup butterscotch chips, melted
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan.
- Whisk melted butter, brown sugar, and granulated sugar. Add eggs and vanilla. Mix until smooth.
- Gradually fold in flour, baking powder, and salt. Stir in butterscotch chips and white chocolate chips (optional).
- Pour batter into the pan and bake for 25-30 minutes. Let cool.
- Drizzle melted butterscotch chips over cooled blondies. Slice and serve.
Notes
- Don’t overmix the batter to keep the blondies soft.
- Store in an airtight container for up to 4 days, or freeze for longer storage.
