  • 2 cups Fiesta Blend cheese, shredded (or a mix of cheddar and Monterey Jack)
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, drained
  • 2 tablespoons taco seasoning, homemade or store-bought
  • Tortilla chips or sliced veggies for serving

Instructions

Step 1: Cook the Ground Beef

In a large skillet, cook the ground beef over medium heat until it’s fully browned. Break it into crumbles as it cooks, and drain any excess grease. Stir in the taco seasoning and mix well to coat the beef evenly.

Step 2: Combine the Cheeses

In a large pot or slow cooker, add the cubed Velveeta cheese and softened cream cheese. Heat on low, stirring occasionally, until both cheeses are fully melted and combined into a smooth mixture.

Step 3: Add Tomatoes and Beef

Stir the drained Rotel diced tomatoes and green chilies into the melted cheese mixture. Add the seasoned ground beef and mix until everything is well combined.

Step 4: Incorporate Shredded Cheese

Sprinkle in the Fiesta Blend cheese and stir until it melts into the dip. This adds an extra layer of gooey cheesiness that elevates the dish.
