Description

This Cheesy Ground Beef Rice Casserole is the definition of weeknight comfort food! Packed with savory ground beef, creamy mushroom sauce, tender rice, and a generous layer of melted cheddar, this dish is quick, satisfying, and guaranteed to be a family favorite.

Ingredients

Scale

1 ½ pounds ground beef
2 cups cooked white rice
1 can (10.75 ounces) condensed cream of mushroom soup
½ cup milk
1 ½ cups shredded cheddar cheese, divided
1 teaspoon Worcestershire sauce
¼ teaspoon garlic powder
¼ teaspoon onion powder
Salt and pepper to taste

Instructions

In a large skillet, cook ground beef over medium heat until no longer pink.
Drain off any fat.
In a large bowl, combine cooked ground beef, cooked rice, cream of mushroom soup, milk, 1 cup of cheddar cheese, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
Transfer mixture to a 9×13-inch baking dish.
Sprinkle remaining ½ cup of cheddar cheese over top of casserole.
Bake in preheated oven for 25 minutes, or until cheese is melted and casserole is hot and bubbly.

Notes

  • Time Saver: Use leftover rice or microwave rice packets to cut prep time in half.

  • Soup Swap: Try cream of chicken or cream of cheddar soup for a different flavor twist.

  • Veggie Boost: Add sautéed mushrooms, bell peppers, peas, or broccoli for extra nutrition and texture.

  • Cheese Choices: While cheddar is classic, feel free to mix in mozzarella, Monterey Jack, or Colby for variety.

  • Freezer Friendly: Assemble the casserole ahead of time and freeze before baking. Just thaw and bake when ready to eat!
