Cheesy Garlic Parmesan Cauliflower

  • 1 medium head of cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

Step 1: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

Step 2: Cut the cauliflower into bite-sized florets. Try to make them as uniform in size as possible to ensure even cooking.

Step 3: In a large bowl, combine olive oil, minced garlic, oregano, garlic powder, red pepper flakes (if using), salt, and black pepper. Toss the cauliflower florets in the olive oil mixture until they’re well coated.

Step 4: Arrange the cauliflower florets in a single layer on the prepared baking sheet. Make sure not to overcrowd the florets for even roasting.

Step 5: Bake the cauliflower for 20-25 minutes, or until the florets are golden brown and tender. Halfway through baking, toss the cauliflower for an even roast.

Step 6: Remove from the oven and sprinkle grated Parmesan cheese and shredded mozzarella over the cauliflower. Return to the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.

Step 7: Garnish with freshly chopped parsley and serve immediately as a side dish.

Variation:

  • Vegan Version: Replace the mozzarella and Parmesan with vegan cheese alternatives. Nutritional yeast can also be used for a cheesy flavor.
  • Spicy Option: Add more red pepper flakes or even a dash of hot sauce to give this dish a spicy kick.
  • Bacon Lovers: For added flavor, you can sprinkle crumbled cooked bacon on top of the cheesy cauliflower before serving.
