  • 1 lb smoked brisket, shredded or thinly sliced
  • 4 slices of sourdough bread
  • 1 cup shredded cheddar cheese
  • 1/2 cup BBQ sauce (your favorite brand or homemade)
  • 1/4 cup pickled jalapeños (optional)
  • 2 tbsp butter, softened
  • 1/4 cup diced red onion (optional)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Prepare the Brisket: If your brisket isn’t already cooked, smoke or cook it until tender. Shred or thinly slice the brisket and set aside.
  2. Assemble the Sandwiches: Lay out the slices of sourdough bread. Spread a thin layer of BBQ sauce on one side of each slice. On half of the slices, layer the shredded brisket, shredded cheddar cheese, pickled jalapeños (if using), diced red onion (if using), and chopped cilantro (if using). Top with the remaining slices of bread, BBQ sauce side down.
  3. Butter the Bread: Spread a thin layer of softened butter on the outside of each sandwich. This will help the bread toast to a golden brown.
  4. Cook the Melts: Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Press down gently with a spatula to help the sandwiches hold together.
  5. Serve: Remove the sandwiches from the skillet and let them cool for a minute before slicing. Serve warm with extra BBQ sauce on the side for dipping, if desired.
