Ingredients
– 1 cup Baileys Irish Cream
– 1 cup sweetened condensed milk
– 2 cups mixed dried fruit (such as raisins, sultanas, and chopped apricots)
– 2 cups self-raising flour
Instructions
1. Preheat your oven to 160°C (320°F) and line a loaf tin with parchment paper.
2. In a mixing bowl, combine the Baileys and sweetened condensed milk. Stir until well mixed.
3. Add the dried fruit and self-raising flour to the mixture, stirring until everything is evenly combined.
4. Pour the batter into the prepared loaf tin and smooth the top.
5. Bake for 45-50 minutes or until a skewer inserted into the center comes out clean. Allow to cool in the tin for a few minutes before transferring to a wire rack.
