The Moment That Changed Everything
I’ll never forget the Tuesday evening that inspired this entire site. I had just picked up my kids from school, and my youngest—who was going through an “I don’t like anything” phase—announced she wouldn’t eat dinner unless it had “no green stuff.” I was exhausted, the fridge was a mix of random vegetables and leftover chicken, and I had about 30 minutes before meltdown hour.
Instead of reaching for takeout menus, I decided to experiment. I diced up sweet potatoes (which she loved), seared the chicken with Cajun spices to give it flavor, and mixed everything in one pan with a little cream to make it “creamy, not green.” When I set the plate down, she took one bite and said, “This is really good, Mom.”
